Gas grills may be fast, but there’s no substitute for the aromas and flavors that come with charcoal grilling. Gas grills are so prevalent that lighting charcoal has become something of a lost art. Fortunately, firing up charcoal is a simple process that delivers tasty results.
Start by clearing out any ash that may be sitting in the grill. Add charcoal in layers to the base of the grill. A single layer of charcoal is enough to cook beef, but chicken requires two layers. Gather up the charcoal into a cone shape and douse it with lighter fluid, concentrating on the center. After allowing the lighter fluid to sink in for about half a minute, light the charcoal in two spots around the base. When the charcoal is white, put the lid on for five minutes and then grill away!
